1⁄3 cup raw sugar
1 sprig fresh rosemary
4 cups (1") seedless watermelon cubes 2 Tbs. lemon juice
1 tsp. grated lemon zest
In pot, combine sugar, 1⁄3 cup water and rosemary; over medium heat, bring to a boil. Cook until sugar is dissolved, 1–2 min. Remove from heat; let cool. Strain. In blender, puree watermelon with syrup. Stir in lemon juice and zest. Pour into 9" square baking pan. Cover; freeze 8 hrs. With fork, scrape frozen mixture into flakes. Spoon into glasses. Serve immediately.
